{DIY Halloween Candy} Part 3: Chocolate-Coconut Mounds Bars

I hope you’ve loved my DIY Peanut Butter Cups & Lollipop posts because I am back with more candy making! I’m finishing up a 3-part serieson DIY Halloween Candy with Chocolate Covered “Mounds Bars”.

One of the things I have loved about making my own candy is that I am able to customize the ingredients to fit my needs, and those of my family members.  I know that some of you {or your family members} have food allergies and have avoided the candy aisles, and even Halloween parties.  Others of you are attempting to avoid unhealthy & harmful ingredients.  While even others of you are looking for candy that is fair-trade.

To all of you I say, come, lets make our own candy!

While I don’t plan on passing these candies out to trick-or-treaters come Halloween night, I do intend to swap out candy my kids receive for some of these homemade yummies.  My kids will happily swap me one of their costume wearing, door to door walking, trick-or-treat earned candies for one of my homemade sweets.

At the end of the night, everyone is happy.

Recipe: Chocolate-Coconut “Mounds Bars”


  • 2 1/2 cups shredded sweetened coconut
  • 1/4 cup confectioners’ sugar
  • 2 1/2 tablespoons solid coconut oil
  • 1 tablespoon brown rice syrup
  • 1 1/2 cups chocolate chips {I used dairy free chips, such as Enjoy Life’s Semi Sweet Chips}


  1. Line a baking sheet with wax paper.
  2. Combine the coconut, confectioners’ sugar, coconut oil and brown rice syrup in the bowl of a mixer.
  3. Press the coconut mixture together with your hands, creating 2 inch long bars.  You should be able to make 13-15 bars.
  4. Place the bars on the prepared pan, and refrigerate until slightly firm, about 10 minutes.
  5. Meanwhile, in a double boiler, melt the chocolate.
  6. Working with 1 coconut log at a time, place the piece on a fork, dip it into the chocolate and coat completely.
  7. Transfer the chocolate covered candy bar back onto the baking pan.  Repeat for all the bars.
  8. Place the pan back in the fridge to allow the chocolate to harden, about 30mins.

    Oh yummm-I love coconut! How long do these last? I was thinking of doing candy Christmas gifts, but they need to have at least a week long shelf life.

  3. These look fantastic. I have plans for replicating cheaper versions of commercially produced chocolate bars. I’m really looking forward to doing it, even more so now.

    @Leah, if you keep these in the fridge they will keep for a while (although I don’t have an actual # of days). I have kept mine in the fridge for over a week for sure! Out of the fridge, I am not sure…..You could do a little experiment and let me know!!

    These look great and actually sound pretty simple. I want to see the inside of one of the bars – maybe you can have someone (I’d gladly volunteer 🙂 take a bite out of your candies next time and take a picture for me 🙂

    I made these for chrismas and they are yummy. It was nice to give a candy bar to my kids since they are usually off limits due to their soy and milk allergies. I didn’t bother with shaping them into logs but pressed them into a square pan and then cut them into logs. After making them I think that the texturefof the coconut would be nicer if it were pulsed in a food processor or something like that. They really benfitted from a little almond extract.
