I don’t know about the rest of you, but I seldom have hard-boiled eggs in my kitchen.  Every year since I’ve had my son, I now find myself with several of them hiding-out in my refrigerator waiting for me to do something with them once Easter has left the building. What to do? I would soon find out…

{Running skirt seemed most appropriate for Easter Sunday}

This Easter, I had the distinct pleasure of having a very low-key brunch at the home of one of my favorite couples.  It was just the three of us and our three dogs. I agreed to stop on over for a delicious meal around 1:00 PM.  This gave all of us a chance to get our sweat on: Super-Workout-Easter-Sunday. I had a run planned with my dog to enjoy the fresh air. I arrived at their home to find one of them having also completed a run and the other having returned from a 40-ish mile bike ride. We were all feeling sweatastic and hungry so this is one surefire way to have a guilt-free holiday meal!

{Recipe Deciphering}

Turns out that they also had colored eggs and a similar dilemma.  Enter the champagne mustard deviled eggs made by my hostess, M.  They were delicious.  I am a moderate deviled egg fan.  They’re good, but I can live without them.  After a sweaty workout and arriving hungry, I can tell you that this was not the case for any of the three of us.  Before brunch was served we had polished all of them off.  Whoahhh! That’s a lot of eggs for three people.

So they’ve helped me decide what to do with the 18 vibrant eggs that are staring back at me from my refrigerator.  Deviled eggs with champagne mustard.  In fact I have a Ragnar Team meeting to attend this weekend so maybe that will be the perfect place to debut them.

  2. I’ve been eating the egg whites, with a dash of salt, for breakfast all week. Not quite as fun as Champagne Mustard Devilled Eggs, I must say.

    I’ve gotta say–I kind of hate deviled eggs. (Mayo is my kryptonite.) I do like big chopped salads, though…
