Butter, heavy cream, peanut butter, sugar…..yeah not so healthy but sometimes you must indulge and if you are going to indulge this is one way to do it! Halloween might be just the right time to pull out this recipe and take it for a spin!
I came across a fabulous picture of a chocolate cake and peanut butter frosting in a blog, Annies’ Eats.
I needed to bring a dessert to a party and thought…this is it! Not so impressed with the cake…probably won’t make that again…but the frosting is to die for and the next time I make a batch it will go on chocolate cupcakes! I cannot tell you how people drooled over this…when dessert was served the guests came rushing as they didn’t want to miss their chance in trying this out.

Kathleen’s Peanut Butter Icing
• 1 cup confectioners’ sugar
• 1 cup creamy peanut butter
• 5 tablespoons unsalted butter, at room temperature
• 3/4 teaspoon pure vanilla extract
• 1/4 teaspoon kosher salt
• 1/3 cup heavy cream
Place the confectioners’ sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth. Spread away on the cake, cupcakes, or just eat straight from the bowl! Add halved or chopped peanut butter cups as a yumm-o decoration.
